Ingredients

1 tablespoon canola oil

1 pound lean ground turkey

2 teaspoons kosher salt, 

3 teaspoon ground cumin, 

1 teaspoon oregano

1 1/2 teaspoon freshly ground black pepper, 

opt, ¼ teaspoon crushed red pepper flakes

1 green or red onion, diced

½ cup green or red bell pepper, diced

3 cloves garlic, minced or pressed

1  can diced tomatoes and green chilies

opt. 1 teaspoon chili powder

10 ounces dried penne pasta

3 cups chicken broth

¼ cup heavy cream

bag baby spinach (2 big handfuls)

½ cup shredded Monterey Jack cheese

Chopped cilantro, for garnish
