Course: Entree, Side Dish

Ingredients
1/4 bottle dry red wine
black pepper
1 bottle of tamari
2 Tbs dark brown sugar or 2 pounds rock candy
1 Tbs soy sauce = 1 package
1/2-inch piece fresh ginger, cut into ¼-inch slices
1 whole head garlic, unpeeled and halved horizontally
2 bunches scallions, white parts sliced into 2-inch lengths, green part, fine sliced
2 whole star anise
4 Thai bird chilis
2 cinnamon sticks
4 delicata squash, washed, cut in half lengthwise, seeded
3-4 cups water
8 baby bok choy, halved and cored
4 sweet potatoes, forked, wrapped in foil, and baked through

Directions
In a large casserole combine the wine, soy sauce, brown sugar, ginger, garlic, scallion whites, star anise, chilis, and cinnamon sticks. Bring to a boil over high heat and add the sugar, stirring to dissolve. Reduce to a simmer and add the squash, cut side down and water to cover. If the liquid doesn’t cover the squash add more water.
Simmer until super tender Pre-cooked beef 15-20 minutes. Uncooked beef for about 1 hour. During the last 10 minutes of cooking, add the bok choy.
Meanwhile, unwrap the hot sweet potatoes and scoop out the flesh into the center of a large platter. Smash them up. Carefully spoon the squash and bok choy from the pot and arrange on a platter, using potatoes to anchor the beef.
Glaze the squash with the sauce and garnish with the scallion greens and serve.

This show is about what I eat and what my family eats. Not all our family members are Diabetic. So I make food for both categories. You won't see me making any Unhealthy cookies, cakes, or candy. I make what we think is healthy food. For us & our guests, I may have something of a sugar nature like soda pop coca-cola, or Pepsi. But that is not something I drink. This is a show of info and entertainment. It is not intended to cure diabetes, for that contact distension or a doctor. I am not a chef, Doctor, expert, or distension. I am just a cook making food for my family and me.
Diabetes is caused by a beta cell in the beta-hemoglobin gene. Diabetes is a disease. That may be reversed by eating better and exercising.

Beta cells in type 1 diabetes
In type 1 diabetes, beta cells die from a misguided attack by the body's immune system How and why that happens is not clear, but the results of a study published in early 2011 suggest that these pancreatic cells become stressed at the earliest stages of the disease process.
