PREP CHICKEN: Brush olive oil over the chicken thighs. In a small bowl, combine the salt, pepper, paprika, garlic powder, and parsley. Sprinkle the seasoning blend over both sides of the chicken thighs and place them on the prepared baking sheet. Open the lid, add the remaining butter, and stir. Fluff with a fork, taste, and season with additional salt & pepper if desired.
